French toast, a deep fried bread in egg batter. Stuffing a bit of minced pork, onions, carrots, crab meat and spices in it, it will become roti babi. It means pork bread in Malay. The name is utterly fallacious politically and enticing at the same time. A very popular dish among the Chinese in Malaysia, but it is certainly not a Malaysian dish. In fact, it is a Hainanese food. The Hainanese chefs in Malaysia created this scrumptious dish by cooking the local ingredients in western cooking style. A true, splendid end product of Hainanese cuisine and Western cooking technique.
WHAT YOU'LL NEED:8 Slices Of White Bread
2 Large Eggs
2 Tbsp Carrots, Finely Chopped
2 Tbsp Crab Meat, Finely Chopped
2 Tbsp Plain Flour
1 Tbsp Fresh Coriander
1½ Tsp Light Soy Sauce
1½ Tsp Dark Soy Sauce
1½ Tsp Freshly Ground Pepper
1½ Tsp Cekur Ginger Powder
4 Shallots, Finely Chopped
2 Pips Garlic, Finely Chopped
½ Tsp Freshly Ground Sea Salt
1 Cup + 1 Tbsp Cooking Oil
100g Pork Mince
HOW TO DO:
- Add coriander, ground pepper & cekur ginger powder to the mince.
Marinate for 20 minutes. - In another bowl, beat the eggs and add in the flour. Leave aside.
- Heat pan with 1 tablespoon of cooking oil.
- Fry the shallots and garlic until fragrant.
- Add carrots, crab meat and mince.
- Season with salt, light & dark soy sauces. Stir over medium
heat until cooked. - Spread the egg batter on bread.
- Sandwich the mince between two slices of bread (The EGGY sides).
- Dip the "sandwich" into the egg batter.
- Heat a pan with 1 cup of cooking oil. Deep fry the "sandwich" until golden brown.
